Oh boy. So poor little ladybug Lavender has RSV. Five babies and she’s the 1st bug to have it. Most of the day was spent loving her up and making her comfortable.

Anyways the food doesn’t cook itself around here. So I made this Mexican quinoa casserole in the instant pot tonight. I had the twins come help me because they were super tired and cranky and Pearl was a hot mess. By “help” I mean- they all helped themselves to cut up watermelon off the counter while I chopped veggies.

Lorelei is my summer lovin’ water baby. She’s out in the pools and sprinklers amy time she can.
We call watermelon “cocomelon” around here.

I also let Juniper help shred the cheese in the food processor by pushing the button with my assistance. Both twins enjoy doing this and I always gasp and go “omg how do you know how to do that?!?!” They alway giggle and feel very proud!

Everyone needs a cheese grater assistant!! She always offers cheese tasting as a service, too!

Sweet little Sky went outside and collected things from nature and got glue sticks and created some nature art. It was so sweet… until everyone started fighting over glue sticks. There was so much screaming….. so much fighting.

I mean SCREAMING. Pearl came out of me a screamer. She’s adorable and sweet as pie sometimes but that girl can scream.

I raced around the kitchen cooking, cleaning up behind them (though you’d never know), getting towels a for the wet girls outside, feeding the sick baby… finally we had quinoa casserole and home made guacamole ready to eat! And they didn’t eat a darn bite. They had watermelon and avocado and cheese and beans and corn and tomatoes (cut into pizza slices)… but no actual meal I cooked 🥴

This is the easiest meal to make for your family to “not” enjoy! You should try it! 🤣 At least Ron and I had a nice meal a couple hours later!

The good news is I got some pretty sweet art out of this cooking time. Sky made me a portrait of myself rocking some pigtails! And also some beautiful nature art!

After the dinner no one ate we had baths. By we I don’t mean me. Obviously. But the cootie covered twins needed an evening scrub down. And speaking of scrub I have a new fun thing! Little Pearl is a sensory seeking kid. She like to slather everything on her body. Paint with food. Immerse herself in all the textures the word has to offer. She seeks out messes and finds way to make them messier. I’ve literally never met a more gross human. I love her. But she’s truly gross. Anyways I had an idea recently to bring her in the shower with me and give her some of my Trader Joe’s body scrub. I told her it’s “scratchy slime” she can play with. Boy was that a hit!!!

After baths something crazy happened! Well. I mean- lots of things happened. Lots of crying, fighting, soaking wet naked people sprinting through the house… but once they had pajamas on and snuggled up with me… Pearl fell asleep on me!!!!

That’s my handsome husband. It’s rare he stops and sits down to relax. But I love it when he does!!

Another long day with things I should have done and wish I had time to do. But lots of things I’n proud of, things I powered through regardless of the situation. Lots of snuggles and nose kisses and tickles and laughs. Tomorrow brings another crazy day I’m sure so my bed is calling!

Oh and I’ll share my dinner recipe if you need a quick vegetarian meal! It’s a very “ish” meal. I eyeball the ingredients and use what I have abs make it differently each time.

Sauté onion and veggies in you IP (I usually use a pepper but I was out and had too many needy kids to go to the garden for one so I used a zucchini.
Rinse a cup of quinoa
Add to the veggies with 1.5 cups of stock, broth, water. cook for 1 min on high pressure.
Add a can of beans and corn. I also added some leftover vegetarian taco meat I’d made the other night!
Stir in about a cup of enchilada sauce and 1/2 cup of shredded cheese. Season to taste. Boom. Done.
Whip up a little guac while it cooks! I use avocado, red onion, lots of garlic and lime, sea salt and a few splashes of cholua hot sauce.
Serve it with some taco toppings and scoopy chips and a salad on the side! If I wasn’t so tired I’d have remembered the jars of pickled red onions and candied jalapeños I made in the fridge to put on top! Oh well! Next time! (Lunch tomorrow perhaps??)
